The cauliflower (Brassica oleracea var. botrytis), known as Phool Gobhi in Hindi, is a popular vegetable in India. India is the Largest producer of cauliflower in the world. There is hardly any house where it is not regularly used as vegetable. With the development of tropical types in cauliflower, in addition to the temperate types, it has now become possible to grow it almost throughout the year. It is generally used as cooked vegetable either singly or mixed with potato as fried or in curry form. Pieces of cauliflower curd (buttons) can be fried with besan the preparation of pakoras. It is also used for the preparation of cauliflower or mixed pickle with other vegetables. It is not nutritionally rich, but considerable amount of vitamin C is present in it.
